Game Day Dry Rub Wings
Do you have some sports fans in the house watching the big game this weekend. It might be winter, but it doesnt mean the grilling has to stop. Check your spice cabinet, shovel a path to the grill, cut up some celery, find the blue cheese and let the big game begin. No matter the outcome, youll win for having the best wings in town.
1 Tablespoon Trade Winds Spice Company Granulated Garlic 1 Tablespoon Trade Winds Spice Company Chopped Onion 1 Tablespoon Trade Winds Spice Company Chili Blend 1 Tablespoon Trade Winds Spice Company Lemon Pepper 1 Tablespoon Trade Winds Spice Company Sea Salt 1 Tablespoon turbinado sugar (raw sugar) 1 teaspoon Trade Winds Spice Company Ground Cumin 1 teaspoon Trade Winds Spice Company Sweet Hungarian Paprika or - Smoked Sweet Paprika 1 teaspoon Trade winds Spice Company Cayenne Pepper
15 whole, fresh chicken wings
In a small bowl, create a dry rub by mixing together the spices and sugar.
With a sharp knife, cut the tips off the chicken wings (discard or use in chicken stock). Slash the inside of each wing joint, but not all the way through, to help them cook more evenly.
Sprinkle the dry rub over the chicken wings, coating them evenly.
Prepare the grill for cooking over direct medium heat. Grill the wings, turning often for 30 minutes or until they are nicely browned and the juices run clear.
Serve the wings whole or cut them into single joint segments.
Cardamom Mangoes
Cardamom is being touted as one of the flavor trends for 2010. Considering cardamom was grown in the gardens of the King of Babylon in 720BC, and the ancient Egyptians chewed it to whiten their teeth and sweeten their breath; I guess its a trend worth thinking about. No mangoes, no worry, this recipe works well using other fruits.
2 large mangoes* ½ teaspoon Trade Winds Spice Company Ground Cardamom 8 Trade Winds Spice Company Fancy Green Cardamom Pods 2 Tablespoons butter 2 Tablespoons brown sugar
Cut the fruit from the 2 mangoes into chunks. Sprinkle with the ground cardamom. Slightly bruise the Cardamom Pods. Melt the butter in a large skillet over medium heat. Add the brown sugar and cardamom pods. Cook stirring until the sugar has melted. Add the mango chunks and cook for 5 to 7 minutes, stirring gently so fruit is not smushed.
Remove from heat and serve. The cardamom pods can be used as garnish and even eaten, but the taste is very strong. Cardamom Mangoes are even better when served with a scoop of Vanilla Bean Ice Cream.
